12oz Mama Rosie’s Tortellini, cooked and cool down
½ cup diced red onion
½ yellow pepper diced
1 small zucchini trimmed and diced (about 1 cup)
¼ cup each chopped fresh basil and parsleyDRESSING
1½ cup olive oil
1 tablespoon Dijon mustard
1 tablespoon red wine vinegar
1 tablespoon apple cider vinegar
Salt and pepper to taste
In a serving bowl, mix tortellini, onion, pepper and zucchini.
Mix in 1 cup of dressing.
Add basil and parsley before serving.
Add more dressing if needed, as well as salt and pepper.
To make the dressing:
In a bowl, whisk mustard, both vinegars, salt and pepper.
Whisk until well blended. Slowly pour in the oil and continue whisking until emulsified.
Use whatever is left on greens or any other salad.
